The Cerasus, a unique place

On the grounds of the Abbey of Saint Savin, a UNESCO World Heritage Site, the abbot’s home has just undergone a long renovation. It becomes the restaurant called “the Cerasus”. The decoration of the restaurant remains deliberately sober in the continuity of the history of the abbey church. For your viewing pleasure, it hosts exhibitions all year round.

Le Cerasus, fine and delicate cuisine

The chef’s cuisine, if it is inventive, is also built around ancestral techniques: picking, smoking, lactofermentation. We respect the seasonality of the products. We favor short circuits. Local producers are in the spotlight.

The Cerasus, an eco-responsible approach

We are aware of the importance of a reasoned purchasing policy. For the fresh produce from our restaurant in Saint Savin, we source our supplies primarily from local producers.

For other products, oil, butter and branded drinks in particular, we pool our purchases with a hotel. We have selected the food wholesaler, the best known of restaurateurs, himself engaged since the 90s, with local producers.
