Chef Thibaud’s innovative cuisine is based on an ever-changing menu, depending upon what is fresh and available locally, as well as what is ready from the smokehouse and pickling rooms. Seasonal produce is sourced from nearby farms, together with the best of local fish, meat and game. The chef relishes the challenge of creating superb dishes from seasonally available ingredients which are locally sourced.
